Parker's Lunch

I've been able to adjust my schedule this summer so I arrive to the studio really early in the morning…work for a bunch of hours and head home to have lunch with Parker..usually around 1ish.  Today, I came home and she was sauteing vegetables for lunch…mostly from the farm share and a few first harvests from her garden.  She has had tons of basil (we've made so much pesto!) and just this week her first tomatoes began arriving.  She's so excited to see the literal fruits of her labor.  She's such a good gardener and a terrific chef!  I'm loving this summer.

Parker's lunch recipe:
Saute the following in a pan with olive oil in the order listed:

1 onion, diced
1 handful of green beans, chopped
1 handful of cherry tomatoes, sliced in half
4 stalks of swiss chard, chopped or roughly torn
9 leaves of basil, sliced or roughly torn
Olive oil and salt to your liking.
Serve over rice.

  2. She seems like such a neat girl! I love my son being small but am definitely looking forward to when he is older and can share more fully my love of gardening and cooking! Also, her watch is rad, guess she inherited her mom's good taste.
