Sustainable Hardwoods





We spent last Saturday learning about sustainably harvested and reclaimed wood in Western Pennsylvania.  There is a super fantastic place called The Hardwood Mall in Emlenton, PA.  The family owns and operates several sustainably harvested forest areas throughout the region..so, if you're in the market for the most beautiful slabs of wood you've ever seen be sure to stop in.  My favorite part was seeing an entire tree, sliced into pieces and restacked into the shape of a tree (the top two photos).

Special Edition Turquoise Carriers

Waffles, everyone!


We gave Parker a waffle iron for her birthday last year (and yes, we did go on a month long waffle binge after that).  This morning, while rummaging through the fridge for something to have for breakfast, we were reminded of how easy it is to whip up a batch before work and school.  Seriously.  It's very easy.  We have this waffle iron and it works great.  Here's my recipe:

1 cup flour
1 cup coconut milk
2 tablespoons oil (i'm partial to olive oil in everything..but, you can use vegetable if you like)
1 egg (leave this out if you want to make these vegan, just add a little more coconut milk as needed)
1 teaspoon baking powder
2 tablespoons sugar (I use vanilla sugar...that I made...see below for that recipe)

Mix it all up and pour into your waffle iron.  
This makes two waffles in our waffle iron.
You can also make a bunch on the weekend and freeze them. They toast up better than eggos, for sure.

We were lucky enough to have a neighbor friend who brought us a jar of his homemade maple syrup (something that is not as easy to do as making waffles) - an unbelievably awesome gift to receive!!!

p.s. the next time you do something with vanilla beans, scrape your seeds out for your recipe, then stick your pods in your sugar bowl.  Keep doing that and you'll have the most fragrant vanilla sugar. easy!
